It’s Halloween month–finally! So, things are going to get pretty interesting around here very soon. Anyone else as excited as I am? Well, if not, today’s post is sure to get you in the Halloween spirit. Wink, wink. Now, as suggested by the title, today we’ll be doing a themed day (in the 13 days) about the spirit world and all things that roam it–ghosts and the like. This is the other world where things go bump in the night, shadows may or may not move, and something could very well be hiding in your closet or under your bed. You know, stuff that freaks the chocolate frosting right outta ya and makes you scream like that robber dude, in the Home Alone movie, who gets the tarantula put on his face. Yeah, just like that. Anywho, as a bonus, today and today only, for the low low price of nothing, I’ll be posting a couple of videos showing ghostly activity: not so much like this, but maybe something more like this. I guess you’ll have to keep on reading to find out. Scared yet? Well, you will be!

Song of the Day

For anyone who’s a Scooby fan, you’ll recognize this song from the 2002 movie soundtrack. I enjoyed the movie. Good times.

Movie: Classic and Current

Classic: The Ring

This movie is about a journalist who investigates a freaky videotape and the fact that anyone who watches it dies in seven days time. Seven days!! Incidentally, I chose to share this particular clip from the movie because the first time I saw this scene, I’d never seen anything like it before. The disjointed, jerky movements and the speed with which Samara moved kept me from being able to blink for over a week. Gaaah!!

Current: Paranormal Activity 4

OK, so essentially, all of the Paranormal Activity movies freak me right out of town. These movies are the reason I will never, ever, ever, ever allow one of those night vision baby monitor things in my house–or the houses of my now adult children. These movies are also the reason why every light in my house was left on for a full month after being watched. It’s too much. They’re just too much. For days after, I’m walking around my house like this.

Here’s some paranormal activity happening in a woman’s home, which she filmed. Brave? Hell no! Bat shit crazy for not getting the F Scott Fitzgerald out of there at the first sign of “activity”!!

Dinner, Beverage, Dessert

As always, the thing to remember when cooking for visual effect is that it still needs to taste good. It has to mess with your mind but not your palette, otherwise, the whole point of Halloween cuisine is lost. So, it’s not always necessarily a recipe that I’ll be sharing, but some tips on presentation. Tonight’s menu is no different, however, there is nothing gross about this meal (unless you don’t like any of the food listed) and there are actual recipes. As you’ll see, this meal is all about visual effect. Don’t get freaked out–none of these recipes are complicated.

Tonight’s Menu

  • Leek and Potato Soup
  • Ghost Vanilla Milkshakes
  • White Chocolate Pumpkin Cups

Leek and Potato Soup

Ingredients

  • 2 large leeks
  • 1/4 C butter
  • 1 small onion, peeled and finely chopped
  • 1 small clove garlic, peeled and crushed
  • 1 teaspoon ground cumin
  • Salt and pepper
  • 1 1/2 lbs potatoes, peeled and diced
  • 2 cups chicken or vegetable stock
  • 3 tablespoons cream
  • Extra cream, for serving
  • Chopped herbs, for serving (optional)

Directions

  1. Remove the dark green tops from the leeks and discard. Slice the leeks in half lengthwise and wash to remove any grit between the layers. Finely slice leeks.
  2. Melt butter in a large saucepan over medium heat. Add leek and onion and stir to coat with butter. Cook for about three minutes, stirring occasionally, until vegetables have softened but not browned.
  3. Add garlic, cumin, salt and pepper. Stir to combine and cook for one minute.
  4. Add potato and stock and stir to combine.
  5. Increase heat to high and bring mixture to the boil. Cover saucepan and reduce heat to low so that the mixture is simmering. Simmer for 25-30 minutes, or until vegetables are very soft, stirring occasionally.
  6. Puree soup. If you are using a blender to puree the soup, allow the soup to cool for about 15 minutes before pureeing. When pureeing hot soup in a blender, we don’t have the blender more than one third full. We also cover the lid with a clean tea towel and hold the lid down while pureeing.

Halloween Ghost Milkshakes

Ingredients

  • 2 cups reduced fat milk
  • 1 cup vanilla frozen yogurt
  • 2 tablespoons chocolate chips, melted
  • 1 teaspoon vanilla extract

Directions

  1. In a microwave safe bowl, melt the chocolate ships at 50 percent power for 40 seconds, stir and repeat at 10 second intervals until melted.
  2. *optional* Using a clean paintbrush, paint ghost face on the inside of a clear cup. Allow to set (5 minutes)
  3. In a blender, combine the milk, frozen yogurt and vanilla. Pour into prepared cups.

White Chocolate Pumpkin Cups

Ingredients

  • ¾ cup graham crackers- grounded
  • ⅓ cup pumpkin puree
  • 2 oz cream cheese-softened
  • ¼ cup powdered sugar
  • ¼ tsp cinnamon or pumpkin spice
  • 15 oz. white chocolate

Directions

  1. Line mini-muffin tin with 24 paper liners and line baking sheet with parchment paper, set aside.
  2. In a bowl mix cream cheese, powdered sugar, pumpkin puree and cinnamon. Stir in grounded cookies and set in the fridge for 30 minutes.
  3. Roll 1 heaping teaspoon of the mixture into balls and place them on parchment paper. It should be 24 balls. (If the mixture is to sticky to roll add more grounded graham crackers)
  4. Melt white chocolate and spread 1 tablespoon into the bottom of each lined muffin cup, set in the freezer for couple of minutes to harden the chocolate.
  5. Place one pumpkin cream cheese ball into each cup and flatten it a bit with your fingers. Cover pumpkin balls with melted chocolate. Tap the pan gently on the working surface to make sure that chocolate is evenly spread over the pumpkin. Set it in the freezer for 5 minutes to harden the chocolate.
  6. Store in the fridge.

Do you see what I did here? Ghost/otherworldly theme and everything on the menu is colorless. But I promise, what the food lacks in color, it makes up for in taste!
